Drying the coconuts

Another one of the cash crops here in the islands is coconuts. The nationals dry what they call "copra." They can dry it in the sun but this is a picture of a smoke house. The fire is underneath giving off just enough heat to dry it all out. They start a fire and let it burn down. Then they start another fire and let it burn down. Then one last fire before they turn it with a shovel. They start 3 more fires and let them burn down. Then the "copra" is ready to bag and sell.
